At the banks of Seven Falls, you’ll find Restaurant 1858, which takes its name from the Gold Rush era and its famous motto, ‘Pikes Peak or Bust.’ The place has a lot of rustic charm, with reclaimed wood, mining inspired light fixtures, and gold rush art. A culinary melting pot, the variety of German, French, and Creole dishes are inspired by the immigrants who traveled west to seek their fortunes.
